The crown is the sloped concrete or mortar surface capping the top of the chimney around the flue. It sheds water away from the masonry below. Crowns crack because thin mortar wash was used instead of a properly sloped, reinforced crown with an overhang, and once cracked they funnel water directly into the chimney.
